With Easter just around the corner, I am determined to indulge in something a little lighter this weekend.
I found this great recipe for raw carrot cake slice on The Sweet Life Blog and I have to admit I may have been a little sceptical,because let’s be honest it is the icing on the carrot cake that is always the star. But I promise you this cashew cream icing on this slice, will not disappoint you, it is divine. Recipe to follow.
Raw Carrot Cake Slice
2 1/2 cups shredded carrots (approx 3 -4 carrots)
1 cup raw walnuts
1 cup pitted dates
1/2 cup unsweetened shredded coconut
3/4 tsp cinnamon
1/2 tsp nutmeg
pinch of Salt
Cashew Cream Frosting
1 cup raw cashews, soaked overnight
1/4 cup water
3 tbsp raw agave nectar
1tsp vanilla
juice of 1/2 lemon
pinch of salt
1/3 cup coconut oil
Line a baking tray with bake paper. By hand or in a food processor shred carrots. Place carrots in a large bowl and set aside. In the food processor blend together walnuts and dates until mostly smooth, then add coconut, spiced and salt. Blend together. Add carrots and blend until well combined.
Press mixture into a baking tin, smooth top and refrigerate.
To make cashew cream, rinse and drain the soaked cashews. Blend in a food processor with water, agave nectar, vanilla, salt and lemon juice. Blend until completely smooth. Add in coconut oil and give it one more zoosh in the food processor. Add to the top of the carrot slice and return to the freezer for a few hours.
I keep my slice in the freezer in an airtight container, just to keep fresh. When serving I remove from the freezer 15 mins prior eating. Slice and Serve with a sprinkle of cinnamon if desired.

Since I introduced my new packages I’ve had the opportunity to work with some pretty awesome people; people like, passionate, clever small business owners and some very talented creative types, and I’m loving it.
Recently I had the pleasure of meeting and hanging out with the very talented local musician, Adrian Keys. Mr Keys caught my attention while performing one night at my local pub, his renditions of songs we’re different but respectful and his original scores are soulful. His voice will make you take notice, in short, he’s good, really, really good.
Adrian teaches and works from his home, which was great for me because it meant I got to meet his gorgeous wife Sophia and their lovely dog Ernie.
