raw peppermint patties .. a recipe

I have been really trying to get this year off to a flying start, surrounding myself with the things that I love, things to nourish body and mind.   I stumbled accross this great recipe for Raw Peppermint Patties on rawified  and had a go at making them myself.  Coconut oil is one of the ingredients, and if you haven’t tried it, let me tell you it’s amazing and very good for you!! Here are somefacts about the benefits of  the magical coconut oil.

  1. Coconut oil is a beneficial  fat, in tech speak it contains short term medium-chain saturated fatty acids, which really means that our bodies metabolise this type of fat in the liver immediately converting this into energy rather than it being stored as fat.
  2. It controls weight and researchers discovered coconut oil is easy to digest and also protects the body from insulin resistance.
  3. The fatty acids in coconut oil contain anti-microbial properties, which will help ease digestion or any nasty bacteria.
  4. A recent study by the Garvan Institute of Medical Research found that coconut oil protects against insulin resistance, reducing the risk of type 2 diabetes.
  5. The healthy fats contained in coconut oil, such as lauric acid, caprylic acid and capric acid all help to support your immunity.
  6. Adds a big boost to your metabolism!
  7. Slows fine lines, because it is wonderfully hydrating for skin too.  It also does its part to keep connective tissues strong, preventing sagging and wrinkles, do I need to say more?
  8. Because of the medium-chain saturated fatty acid it gives coconut oil a higher smoking temperature than most polyunsaturated or monounsaturated oils.
  9. It helps stop sugar cravings!!!
  10. Aside from all the above, It is super easy to cook with!

 

Peppermint Patties:

½ batch of raw chocolate

¼ cup cashews

½ shredded coconut

¼ cup coconut oil

1 tbsp honey

¼ tsp peppermint oil

  1. Firstly grind up the cashews and shredded coconut together into a fine powder.
  2. Add coconut oil, peppermint oil/essence, and honey and pulse until combined. Refrigerate this for 20 mins.
  3. While the mixture is cooling prepare the chocolate, by melting over a saucepan with simmering water.
  4. Shape the coconut oil mix into patties and place into the freezer until they are chilled and firm.
  5. When the patties are cold, drip them one at a time into the chocolate sauce.
  6. Keep in the freezer or refrigerator until you are ready to enjoy a delicious treat!

Quince & Mulberry Studios + Let the Kids//entry for Yan’s workshop

It is not every day that a photographer you adore, well love,  runs a workshop in Australia and it isn’t everyday you are presented with an opportunity to win a seat to said workshop.  But, to more than my delight it has happened…  (YAY!!!!!!!)

Let the Kids are running a competition to Yan’s Workshop. So, after feeling very confronted about making a video, then immensley nervous, then hearing back my  recorded voice, making me want to back out of the whole thing…. I decided that I had to give it a go.  Because, I made a promise to myself that this year about about growing and expanding, and let’s be honest, that was never going to be comfortable was it?  But, I feel that the timing is perfect. I am ready for the hard work that will take my work to that next level, and make sure I am fulfilled as an artist.
