Ever since I was a little girl I have adored that scene in Willy Wonka when Charlie visits the candy store. Walls of jars filled with delicious goodness.
As a “grown up” I find myself drawn to yet another chocolate movie- chocolat. The perfect compliment to a blanket, generous slab of dark chocolate, and a vino.
The perfect chocolate shop is a guilty pleasure, making it seductively tantalizing. Each individual piece should be savored, as it oozing with love and purity. so deliciously good- it becomes irresistible.
When I tried Monty’s Chocolates (155 Latrobe Terrace, Paddington) for the first time, I didn’t and still dont have the words to describe the perfection in the flavor that exploded in my mouth. With a large variety of beautiful chocolates from all over the world- it is hard to go past the tasting plate to share. The staff are friendly, knowledgable and passionate. My favourite, is the salted caramels. Unlike anything else the bitter dark chocolate softens in your mouth, then the crochenudo – the warmth from the salted caramel escapes from the balls harmonizing with the chocolate. Then I get too lost in pleasure to keep my train of thought… All I know now is

When I first spoke to Rosie over the phone, there was an instant thought of ~ I have to work with this girl. A vivacious, yet gentle spirit. I was already forming ideas for a our session, before the end of that phone call.
When I first met Rosie, it was her Uni mid-semester break. ~ the week categorised as a holiday, but never is ~ she was wheeling a suitcase of her favourite outfits, some hers, some borrowed from her closest confidants.
Any sitting with just one subject, is an interesting unfolding of the self. The most captivating photos are the ones where the true emotion bypasses the nerves and the other mixed feelings.

You Will Need:
Whole rump steak
1 cup flat leafed parsley cleaned and finely chopped/processed
½ cup rocket cleaned and finely chopped/processed
2 cloves of garlic
1 red chilli
½ teaspoon of dried oregano
¼ teaspoon pepper
½ cup olive oil
Salt and Pepper
¼ cup mayonnaise
Tomato
Cheese
Bread/rolls
Prepare the parsley, rocket, garlic, chilli and herbs and place them into a mixing bowl. Reserve two tablespoons of the marinade in a separate bowl. Rub the steak with the remaining marinade. Cover and Refrigerate for at least 2 hours.
Remove the steak and allow it to come back to room temperature. Scrape off some of the excess marinate and salt the steak.
Prepare the other ingredients. Mix the reserved marinade mix with the mayonnaise. Slice the tomato and prepare slices of cheese ready for the grill.
Cook the steak on the BBQ to medium well (or to your preference.) Allow the meat to rest and generously pepper the steak. While the steak is resting grill the bread, adding cheese if desired. Gently, slice the steak into strips and assemble the burger.
** tip: for any left over marinade I highly recommend tossing through some vegetables (pumpkin, potato) before roasting.
