This post is a combination of celebrating my love of cooking for others and my love of Sun & Earth Organics (…such a delicious relationship we have!).
Also ~ a little step towards my goals. Firstly, I have wanted to send out regular newsletters for a long time now and today I have done it! I can visualise it already, its hard cover, big beautiful photographs on its lightly textured paper, the pages that make that little noise when you turn them.
In the meantime, this is my start ~ and this is a recipe with all ingredients found at Sun & Earth Organics.
Sticky Date Pudding
1 ½ cups pitted dates
1/3 cup boiling water
100g butter softened
½ cup honey
3 eggs
1/3 cup Barambah Organics Natural Yoghurt
2 ½ cups almond meal
1 tablespoon baking powder
Honey
Cream/Ice cream to serve
Finely chop dates and place in bowl. Cover with boiling water. In a separate bowl mix the butter and honey until creamy. Add the eggs one at a time, mixing thoroughly. Add yoghurt and mix. Add in date/water mix. Fold in almond meal and baking powder.
Add to your favourite baking dish, works well as individual serves or a 20cm tin. Bake at 160 for approximately 45mins, or until golden brown with a bit of spring.
Serve with honey, cream or ice-cream.
